Iridium X Agave Cask
Agave Cask Rum · 700 mL · 47% ABV
One barrel, finished in ex-agave oak. Smoke and green pepper against ten years of tropical sugar.
This is rum, finished in an agave cask. The base liquid is ten-year-old Australian rum distilled from North Queensland sugarcane syrup. The agave cask is the finishing vessel, and the final product is bottled and sold as rum. It is not tequila, not mezcal, not an agave spirit, and not a blend of rum with one. It is not Agave Australis, which is a separate Mt Uncle product. No agave is fermented or distilled here. Agave casks explained
Style Winner and Gold, Pot Still 6 to 10 Years Old, World Rum Awards 2026 · entered as Iridium Agave Cask Finish
Silver, London Spirits Competition 2023
This release is finished. The dossier stays published, and the record stays with it. Current releases and availability sit with Mt Uncle Distillery.
Why it exists
This release exists because one cask behaved differently from the rest. Ten-year Iridium X finished in ex-agave oak, kept separate rather than blended back, and bottled as a single barrel.
Tasting
- Nose
- Roasted agave and green pepper first, then fig, cigar box and dark sugar.
- Palate
- Ten years of tropical oak under a dry, vegetal top note. Smoke rather than sweetness.
- Finish
- Long, dry, faintly herbal. The agave stays after the rum has gone.
- Serve
- Neat in a tulip. Water opens the agave and flattens the oak, add it sparingly.

Ten years, and where the ten comes from
The bottle settles this. The neck label prints AGED 10 YEARS / LIMITED RELEASE above CASK No. A001, and the front label prints IRIDIUM X / LIMITED EDITION / AGAVE CASK. The 2026 World Rum Awards entry sits in the Pot Still, 6 to 10 Years Old category, which is consistent with the bottle and not with a five-year spirit.
The Mt Uncle product page for this release currently types it as a five-year agave cask finished rum while naming it Iridium X in its own heading. That line disagrees with the packaging, the award category and this page. We follow the packaging, because the age statement printed on a bottle is the one that has to be right, and the correction has been logged for Mt Uncle rather than quietly absorbed here.
What is not published
Four things about cask A001 are not stated anywhere on this site, because none of them is yet verified against a production record. A specialist would ask all four, and guessing at any of them would be worse than the gap.
- Which agave spirit the cask previously held
- Cask origin and cooperage
- Cask volume
- Length of the finish
They will be published when someone reads them off the fill sheet, and not before.
Provenance
The number on your neck label resolves to a barrel record: what was filled, which cask, when it was drawn, and how it tasted each time we drew from it.

When it is gone, the record stays
A single barrel makes a single release. This one was drawn, checked and emptied in an afternoon, 240 bottles, and a published record that outlasts them.

What is actually on the label
The front label reads Australian Rum · Far North Queensland · Iridium X · Limited Edition · Agave Cask. The neck label carries a limited-release statement, Cask No. A001 and a bottle number, 285 on this one. The round sticker on the shoulder is The Rum Revolution, Brisbane 2022.
It says Australian Rum because that is what is in it. The agave is the cask, not the spirit.
